个人简介:

单凌越,工学博士,山东滨州人。主要从事食品营养与功能性食品成分开发。

2013-2017 山东农业工程学院 食品质量与安全专业 学士

2017-2020 青岛农业大学 食品科学专业 硕士

2021-2025 韩国江原大学 食品科学与生物科技专业 博士

以一作身份发表SCI论文10余篇,国际发明专利1项,主持或参与各类科研项目5项。

主要研究方向:

1.基于食品生物技术的功能性食品成分开发;

2.益生菌及其后生元的健康功能评价;

3.食品营养对机体代谢与免疫稳态的干预;

4.非靶向代谢组学在食品营养与健康中的应用;

5.肠道菌群及其代谢产物的调控机制及其相关生理功能研究
