谭欣同 专业主任,副教授 个人简介: 谭欣同,1990年3月出生,中共党员,山东泰安人,工学博士,食品质量与安全专业主任,副教授,硕士生导师。主要学习经历: 2019.9-至今 山东农业大学食品科学与工程学院 专业主任,副教授 2016.9-2019.6 西北农林科技大学 食品科学与工程学院 工学博士 2013.9-2016.6 山东农业大学 食品科学与工程学院 工学硕士 2009.9-2013.6 山东农业大学 食品科学与工程学院 工学学士 主要研究方向: 1. 膳食模式与肠-脑健康互作机制:围绕神经系统和肠道功能的互作整合,针对阿尔兹海默症等神经退行性病变、压力引起的焦虑抑郁等脑健康问题,探究氨基酸限制饮食、中链脂肪酸生酮饮食等特色膳食模式通过影响肠道微生态结构、调节糖脂代谢平衡,进而干预中枢神经系统功能的营养干预作用,揭示膳食成分与结构通过影响外周系统进而影响脑健康的“肠-脑”轴机制。 2. 食品营养功能组分发掘与功效评价:结合山东省特色食材资源和全民营养健康现状,发掘果蔬、粮油等传统食品原料、特色农产品中具有调节肠道微生态、糖脂代谢稳态、改善脑健康问题等生理功能的食物功能成分,发掘有益肠、脑健康的植物化合物及多种模型的功能性评价等。 3. 氢医学特膳食品的作用机制研究与产品开发:富氢水,纳米氢气泡水,富氢水凝胶递送体系对阿尔兹海默症、慢性压力的抑郁行为等脑健康相关的干预作用与机制研究。富氢冷翠茶饮、纳米氢气泡中草药的产品开发。 代表性科研项目: 1.国家自然科学基金青年项目,No.32001978,主持;30万元 2.山东省自然科学基金青年项目,No.ZR2020QC238,主持;15万元 3.中国博士后自然科学基金面上项目,2021M691972,主持;8万元 4.山东省乡村振兴提振项目子课题,主持;10万元。 代表性科研论文: (1-3) (1)Gao, Huajing, Xintong, Tan*.
